Savory Grainless Crackers




I adapted this recipe from a Paleo cracker recipe I found online.  It is difficult for me to find a commercially produced cracker that I can eat with all my food restrictions.  It is pretty hard to find a recipe for a gluten free cracker that tastes good and doesn't just crumble.  This recipe is really amazing - it has no added fat (just what is found naturally in coconut and nuts).  It is very high in protein and fiber.  I have made a few adaptations to this recipe - which I will be sharing over the next several weeks.  Stay tuned!

 
Savory Grainfree Crackers

1 cup coconut flake chips
1 cup almond meal
¼ cup chestnut flour
¼ teaspoon guar or xanthan gum
½ teaspoon salt
¼ teaspoon onion powder
¼ teaspoon garlic powder
½ teaspoon rosemary leaves, crushed
½  teaspoon black pepper
1 egg

Place 1 cup coconut chip flakes in food processor for 1 minute or until almost paste like (coconut oil is released and causes powdery flakes to stick together).
Add almond meal, chestnut flour, and seasonings.  Blend.  Add egg and blend until all ingredients form a firm ball.
Place ball between two sheets of parchment paper and roll as thin as possible (1/16” or less).
Use a pizza cutter to slice dough into cracker sized pieces (about 1 ¼” squares).  Lift entire sheet of parchment with crackers still on it onto a cookie sheet.
Dust the tops with coarsely ground salt.
Bake at 350 degrees for 10 minutes or until golden brown and firm.

  1. Cynthia....these look wonderful and just the perfect take-along for my days at the wildlife preserve photographing the migrating birds...so off to the natural foods store to get the ingredients that are not in the cupboard.
