Chicken Noodle Soup - Gluten Free Version


Bring prepared chicken broth to a boil.  Add diced carrots, celery, and onion as desired.  If you have meat leftover from making the broth, add that back at this point, also.  After the soup is at a full rolling boil, add 1/2 package of Tinkyada Linguini - a whole grain rice pasta.  Cook for 15 - 20 minutes or until noodles are soft.  Serve immediately and do not overcook.

Tinkyada Brown Rice Pasta is my preference.  It has a good texture.  Here is their website.

Adapting a Gluten-free Yellow Cake Mix for a Non-Dairy diet

I recently picked up a King Arthur Flour mix for Glutenfree Yellow Cake.

INGREDIENTS: SUGAR, MODIFIED TAPIOCA
STARCH, RICE FLOUR, POTATO STARCH,
CORNSTARCH, EMULSIFIER (RICE STARCH,
POLYGLYCEROL ESTERS OF FATTY ACIDS,
MONO- AND DIGLYCERIDES OF FATTY ACIDS),
BAKING POWDER (SODIUM ACID PYROPHOSPHATE,
BAKING SODA, CORNSTARCH,
MONOCALCIUM PHOSPHATE), NATURAL
VANILLA FLAVOR, SALT, XANTHAN GUM.

The recipe on the box calls for butter and milk.  I substituted the 1/2 cup butter with 1/2 cup safflower oil.  I substituted the 2/3 cup milk with 1/3 cup So Delicious Unsweetened coconut milk and 1/3 cup water.  I used the 4 eggs called for in the recipe.  I used a springform tube pan to bake the cake and it turned out great - a very nice version of a pound cake.  

Gluten free white cake mixes, in my experience, tend to be fairly dry and overly dense.  This one turned out very nice.  I don't think anyone realized it was gluten and dairy free.  This cake kept well for the 4 days it took to finish eating it!

Tomorrow, I will show you how I got that pink icing without using food dye!

Lemon Pepper Grinder from Trader Joe's

Some Lemon Pepper seasonings contain chemicals to prevent caking.  That's why I was so pleased when I saw this Lemon Pepper Grinder in Trader Joe's.  All the ingredients are natural, and because it is freshly ground each time - the flavor is much fresher than most seasoning mixes I have tried.

We don't have a Trader Joe's in Montana, so whenever we visit a city that has one - I stock up on my favorite products!  Next time, I am going to pick up extra Lemon Pepper Grinders for family members!

Wheat-free, Soy-free, Dairy-free Corn Bread



This recipe is so authentic, nobody will ever guess it is wheat and dairy free.  I love cornbread!

Favorite Cornbread
(very light and fluffy)

2 cups corn flour
2 Tablespoons sugar
4 teaspoons baking powder
1 cup milk or milk substitute
3 eggs, beaten
1/3 cup vegetable oil


In mixing bowl, combine dry ingredients.  Stir in milk, eggs, and oil.  Do not overbeat.

Pour into greased 9 x 9” baking pan or muffin tins. 

400 degree oven 15 to 20 minutes.

Gluten Free Valentie's Day Treat - Pamela's Chocolate Cake Mix

This is a super easy and very yummy mix.  So simple to fix - just add oil, eggs, and water.  It can be made without eggs, too.

Organic Natural Evaporated Cane Sugar, Brown Rice Flour, Organic Cocoa Powder (processed with alkali), White Rice Flour, Tapioca Starch, Inulin, Sweet Rice Flour, Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch), Sea Salt, Gluten-free Natural Flavor (contains corn derivative), Xanthan Gum.
